 OUR WINE MAKER TIM WHITE

 

Tim White is Thistle Hill’s award-winning winemaker and owner of The Hill’s self-appointed ruler, protector and mascot, Thurston, a Jack Russell cross.  Originating from the Northern Beaches of Sydney, "Dr" Tim has a Wine Science degree from Charles Sturt University on the back of a Ph.D. in Chemistry from University of New South Wales.  Tim has spent many years working in NSW wine growing areas and abroad, has a real passion for Mudgee wine and loves calling Mudgee "Home".

 

Tim enjoys taking photographs around Mudgee, catching and cooking local produce, or just relaxing down by the river with friends; he is involved in the technical group, the Mudgee Wine Association, which is testament to his skill across the district.

Tim believes that Organic wine highlights the true character of the grape, without the additives commonly found in commercial wines. He is often heard talking passionately about the vibrancy and life abundant in Thistle Hill's organic vineyard.  When you visit, you can see that for yourself!

 

ORGANIC FRUIT IN A BOTTLE Organic farming was a choice Thistle Hill made forty years ago when we first started producing wine in the 1970s, not just because it’s better for our consumers, but because we genuinely believe organic wines simply taste better and sustainable farming is the right thing to do.

OUR STORY

It all began in Erudgere in 1975 on an expansive hill covered in the cottony, purple hue of the invasive Milk Thistle weed.  Dave and Leslie Robertson, with vision, grit and the help of good friends, painstakingly removed the Thistles and replaced them with the deep burgundy and lush green of grapevines. Dave lovingly made the wine right up until his death but his memory and the story of our beginning remains immortalised in our name.  Thistle Hill Organic Vineyard and Winery grew out of these original vines planted by the Robertsons; vines that are still producing our fruit to this day.

Though the Loughan family had already built several businesses in Australia, it wasn’t until they discovered Mudgee that they found their NSW home. After investing in Thistle Hill they decided to move to the farm not just to oversee their new business, but to learn from the roots up how to grow the best organic wine in Australia. Rob and Mary Loughan, the co-owners of Thistle Hill, have a long history as a celebrated entrepreneurs all over the world. Among the projects they is are most proud of, a list that starts with Thistle Hill, the Loughans have built award-winning snowboarding resorts, several high profile internet companies and executive produced a friend’s solo blues album at Capitol Records in Hollywood, California
