Thistle Hill is an award winning and sustainable winery that has been making organic and preservative free wine decades before it became a trend. Since 1975 we have been pulling grapes from the same vines that were first planted on The Hill, and we were among the first few vineyards to adopt total organic wine farming practices in Australia.
Thistle Hill wines have been local and national favorites for four decades. You can taste the fruit in every glass and it’s all because of the grapes we harvest that are nurtured organically and always have been. Organic grapes become organic wines and they simply taste better.
Thistle Hill began making wine in 1975 on the grounds of one of Mudgee’s historic landmarks from the Australian gold rush of the 1800s. On our property stands the first waystation, where gold miners came to relax and take in the beauty of the valley. Our guest-house is available year round for travelers who want to experience Australia’s rich history in a unique and cozy way. Stay on The Hill!
Tim White is Thistle Hill’s award-winning winemaker and owner of The Hill’s self-appointed ruler, protector and mascot, Thurston, a Jack Russell cross. Originating from the Northern Beaches of Sydney, "Dr" Tim has a Wine Science degree from Charles Sturt University on the back of a Ph.D. in Chemistry from University of New South Wales. Tim has spent many years working in NSW wine growing areas and abroad, has a real passion for Mudgee wine and loves calling Mudgee "Home".
Tim enjoys taking photographs around Mudgee, catching and cooking local produce, or just relaxing down by the river with friends; he is involved in the technical group, the Mudgee Wine Association, which is testament to his skill across the district.
Tim believes that Organic wine highlights the true character of the grape, without the additives commonly found in commercial wines. He is often heard talking passionately about the vibrancy and life abundant in Thistle Hill's organic vineyard. When you visit, you can see that for yourself!
